Spinach, Carrot and Lentil Soup

  • 1 cup lentils

  • 2 tbsp oil

  • 1 medium sized onion

  • ½ tbsp ginger garlic paste

  • 2-3 carrots

  • 1 handful of spinach

  • salt (according to taste)

  • ½ tsp pepper

  • ½ tsp cumin powder

  • ½ tsp coriander powder

  • ¼ tsp turmeric powder

Cooking Instructions:

  1. Boil lentils until soft and keep aside.

  2. In a pan heat up some oil, add the chopped onions to it and let the onions fry till light golden in colour. Add ginger garlic paste to the onions and fry for few seconds and add salt, pepper, cumin powder, coriander powder and turmeric powder and mix well.

  3. Mix in the grated carrots and spinach to the onion mixture and cook for 5 minutes.

  4. Add boiled and blended lentils to the onion, carrot and spinach mixture and mix well and cook for 10 minutes.


Optional: Serve with toasted Pitta Bread
